Create 2 profiles in outlook, one for each mailbox. Make sure your outlook is open in that profile before sending emails from Pastel.
You can also create the second profile with send mail capabilities only and use that to email out statements/invoices. It does mean you won't have your sent items relating to accounts in your main profile, but replies and future mails can go to your main profile.
