Anthony, could I ask you to check the leave situation in that contract? To my mind the sick leave in particular seems odd given it's a one year contract, but the others might do with some tweaking too.
      Participation is voluntary.

Even though the contract is for 12 months, or whatever period, leave accumulates on the same ratio or formuale as normal contracts. If the contract is renewed or continues the period of employment is uninterrupted and benefits accrue accordingly.
Because the fixed term contract won't reach the 3 year cycle, the 6 weeks leave is not possible by mere operation of law, if however the employee has had a contract renewed for 3 years, they are now entitled to the leave. Some employers remove 11.1 and we change 11.2 to say 1 day sick leave per 26 days worked.

Note: the minimum wage is now R11.33 for hospitality sector.
Sunday pay, even if normal hours is time and a half
There is also meant to be a night shift allowance and transport allowance for night shifts
