Here in SA, 1 payment at month-end is pretty much the norm. Is this a legal requirement? Is there a defined outer limit for how long an employee should have to wait before being paid what's due to them?

Weekly, bi-weekly or monthly are the most common for regular employment. However, longer periods between payments do happen, although normally not for "regular employment" (I'm thinking in particular of directors emoluments which might be paid quarterly or even annually).
Generally when payments are made is set out in the employment contract - that's the first place I'd look to establish what your particular contractual situation might be.
